Description

Disodium 5'-inosinate (IMP disodium salt) is a nucleotide-based umami agent. Disodium 5'-inosinate can bind to umami receptors and stimulate taste nerves, allowing the brain to perceive umami. In addition, Disodium 5'-inosinate produces a transient behavioral excitement in mice[1][2].

In Vivo

Disodium 5'-inosinate (0.001 M 2 mL; Oral catheterization; Single dose) responds to oral stimulation in rat solitary-tract nucleus neurons and is involved in encoding umami taste[1].
Disodium 5'-inosinate (500 mg/kg; Intravenous injection; Single dose) produces a transient behavioral excitement in mice[2].
